In the later part of 2015, I surprised my wife when I bought a (slightly used)snow cone truck. Needless to say, she didn't share my vision at that time, BUT she didn't divorce me either. After months of endless research, we decided we wanted to to serve grilled cheese sandwiches. So, in the early part of 2016 we sent the truck to Holy Smokes Creations in Tyler, Texas for a complete rebuild. We were not in a hurry, so the rebuild was slow, but the truck was build to meet or exceed the local health and fire code requirements. It took approximately 6 months to complete, but when it was finished we had an exceptional commercial kitchen on wheels.
During the rebuild time, I set up the griddle at home so I could learn how to cook on it. For the next 6 months, I practiced cooking (often burning) everything from bacon, eggs and pancakes, hamburgers, hot dogs, steak, to a variety of grilled cheese sandwiches. It wasn't as easy as I thought it would be. Eventually, I got the knack of cooking on the griddle, and the family began to eat my food.
Around October 2016, the truck rebuild was complete. Now we had to find a commissary. For the next 3 months we did everything we could think of to find a commissary. February, 2017, a friend on facebook connected us with the leader of Crisman School, and our search for a commissary was over!

Private events start at $550.00 + tax for the first 40 servings. Additional servings are $12.00 + tax each. To book an event a non-refundable $250.00 deposit is required. The date will be reserved upon receipt of this deposit. The remaining balance will be due on the day of the event.
